Have you ever tried a Poptail? A poptail is 1 part cocktail, 1 part popsicle and 100% summer fun. As someone who is always to trying to squeeze every last bit of summer in, this Labor Day weekend will be no different. To start the party off right I am sharing this super easy and satisfying recipe for a prosecco popsicle widely known as a poptail.
For this poptail recipe, I splurged on these really cute popsicle molds. I love kitchen gadgets and I just really couldn’t resist them. An ice tray, small dixie cup, and wooden popsicle sticks will work just as well.
2 1/2 cups fresh chopped fruit (such as mango, pineapple, strawberries, watermelon)
1/2 cup of Simple Syrup
1/2 cup Prosecco (or other sparkling wine)
Juice of one lime/lemon (optional)
Step 1: Pulse fruits of choice in a blender or food processor until pureed and juice-like, about 1 minute.
Step 2: Combine fruit mixture, simple syrup, Prosecco, and citrus juice with a whisk in a medium bowl. Let stand until bubbles from Prosecco subside.
Step 3. Pour mixture evenly into popsicle molds. Insert an ice pop stick into each mold. Freeze for 8 hours or overnight.
Step 4. Remove the molds from the fridge, unmold your poptail, grab your favorite magazine, find a lounge chair and enjoy!
